Wine & cava in Catalunya is one of Spain’s most prominent wine producing areas, boasting eleven appellations of origin. Vines have been grown in Catalonia for more than 2,000 years. In 1879, the arrival of phylloxera led to a sharp decline in the wine industry, but in the 1960s, wine production started on the road to recovery, particularly in the Penedès area. Today, Catalonia is Spain’s biggest producer of wine with appellation of origin, with a production rate of 380 million bottles per year, including cava, which accounts for half of this production.

El cava Cava is the Catalan sparkling wine with designation of origin, produced using the traditional method, just like the best sparkling wines. To elaborate this wine the variety of grapes used are Macabeu, Xarello and Parellada. The production area is made up of 160 municipalities, of which Sant Sadurní d’Anoia, known as the cava capital, accounts for 75% of total production. Vineyards are spread over 35.000 acres around this town and a visit to the wineries helps to understand the elaboration process. Today it is one of the most dynamic production sectors in Catalonia, with more than 200 million bottles produced every year. Ideal for an aperitif or for accompanying meals, cava has earned its place in the world wine market. It can be brut, dry and semidry of sweet, depending on the concentration of sugar and it is always served in a flute glass type, completely colorless to appraise and assess the path of the bubbles.
